Chicken Wrap
Ingredients
8 whole grain wraps
1 1⁄4 pounds roasted chicken, shredded (about 2 cups)
1⁄2 cup light sour cream
1⁄2 cup light mayonnaise
1 head bibb lettuce
1 cup grapes, sliced in half
1⁄2 cup toasted walnuts
1-2 apples, thinly sliced
1 cup red bell peppers, roasted and cut into strips
1-2 tomatoes, diced
1 red onion, cut into thin strips
Salt and pepper
Method
1. Combine mayonnaise and sour cream. Season with salt and pepper.
2. Add chicken and mix.
3. Place a few leaves of lettuce and a small amount of chicken on whole grain wrap.
4. Top with apples, tomatoes, peppers, grapes, onions and walnuts.
Serves 8
