Kitchen Window's Dr. Pepper BBQ Pork
Ingredients
1” thick pork loin
salt, to taste
smoked black pepper, to taste
½ Cup Dr. Pepper BBQ Sauce (see recipe below)
Method
1. Season pork with salt and pepper.
2. Sear pork on high until grill marks appear. About 4 minutes per side. Pork should release from the grate when it is ready to turn.
3. Reduce heat to medium or move to cooler part of grill.
4. When internal temperature of the pork reaches about 140 degrees, baste with BBQ sauce.
5. Allow pork to finish cooking. Grill until the internal temperature of the thickest part of the pork reaches 145 degrees. Remove pork to a platter and allow to rest about 10 minutes. During this time, the food will continue to cook and the temperature will continue to rise. Your finish rested temperature should be 155F, if the pork does not reach this temperature return the pork to the gill until it does.
Dr. Pepper BBQ Sauce
Ingredients
½ cup minced yellow onion
1 (6oz) can tomato paste
2 cups Dr. Pepper soda
2 tablespoons Worcestershire sauce
2 tablespoons cider vinegar
1 tablespoon unsalted butter
2 teaspoons kosher salt
1 teaspoon smoked black pepper
¾ teaspoon granulated garlic
½ teaspoon dry mustard
½ teaspoon dry thyme
1/8 teaspoon chipotle (add more or less based on heat preference)
Method
1. Combine all ingredients for the bbq sauce in a medium sauce pot and cook over medium-high to high heat for 7-10 minutes or until the desired consistency.
