Gyoza DumplingsPork Dumplings (Gyoza) & Dipping Sauce

Dumpling Ingredients
1 cup Ground pork
¼ cup Onion, finely minced
3 tablespoons Green onion, chopped (green parts only)
1 clove Garlic, finely minced
1 tablespoon Ginger, minced
½ teaspoon Sesame oil
1 tablespoon Soy sauce
¾ teaspoon Sugar
½ teaspoon Black pepper
1 package Pot sticker wrappers
Canola or peanut oil for frying

Dipping Sauce Ingredients
¼ cup Soy sauce
1 tablespoon Mirin
1 tablespoon Sushi vinegar
¼ teaspoon Sesame oil
1 teaspoon Sugar
1 teaspoon Wayzata Bay Sesame Seasoning

Method
1. Combine all dipping sauce ingredients in a bowl and set aside.
2. Preheat a wok, teppanyaki table or frying pan over medium-high heat.
3. For the Pot sticker filling: Combine all the ingredients except the potsticker wrappers in a bowl and mix thoroughly.
4. Place a small scoop of filling in the center of the potsticker wrapper, then rub a small amount of water around the edge of the wrapper and fold in half with a dumpling press or by hand. Press the edges to seal. Repeat with the remaining filling.
5. When the wok is hot, add some canola or peanut oil and gently slide the potstickers down the side. When the potstickers begin to brown turn once and add a small amount of water to the wok and cover immediately.
6. Let steam for 1-2 minutes. Remove from the wok.
7. Serve with dipping sauce.

Yields: 16 dumplings
